ME TO MATI, translation being “with the eye”, exhibits itself in the kitchen as the Greek style of not really measuring anything. It entices you to trust your instincts, use your judgment and emphasizes that there is no one way to make things perfect. The unique combination of what you bring to the table is what makes things special. This is what I have learned from the women in my family, specifically my Yiayia (or grandma to those non-Greeks out there), and this philosophy can apply to life as well as the kitchen. It is a huge confidence builder and I hope to share that with you in this book. Anyone can cook if you use your best judgment and your eyes.
